Prawn Masala

Prawn Fry


What You Need: 
Prawns                        : Two cups
Onion                          :  2 big ones
Green Chili                  :  3 , cut into two or three
Black pepper powder  : 1/2 tea spoon.
Kashmiri chili powder  : Two tea spoon
Ginger Paste                 : One table spoon
Oil                               : Two table spoon.
(Any chili powder with more red color and less hot..)
Optional for those who don't use.
Turmeric powder         : 1/2 tea spoon.
Curry leaves                 : 8-10

Preparation:
Heat Oil in a pan. Add Onion, green chili and ginger paste . Saute it for a minute. Add a pinch of salt into it. When onion starts changing its color add pepper powder, turmeric powder, chili powder and curry leaves. Saute it for few seconds and add a table spoon of water. Let it boil for a minute . Add prawns & salt into it and keep it in low heat with lid on. Prawns take only a little time to cook.After three minutes cook in high heat with lid off.  Easy prawn fry is ready to go with rice !Hurray!!

Rava Dosa

I learned it from my Tamil friends..Plenty of version are there for Rava Dosa. Here it is a simple yummy recipe. Before starting let me warn you what you need most: Patience!!Not the patience to cook. But the patience to leave the batter on pan and leave for some time untouched. ;-).

What you Need:
Rice : 1 cup
Semolina (Rava) : 2 cups.
All purpose flour (Maida) : 1/2  cup.
ButterMilk : 4 - 5 cups.
salt: as needed.

Seasoning:
Mustard Seeds : Half tea spoon.
Curry leaves : 8 - 10
Green chili : 3 cut into small pieces
Cumin seeds: a pinch if you like 
shallots : 3 pieces. Or one small onion finely chopped.
salt: as needed.
Oil : One table spoon.
Asafoetida : 2 pinches.

Preparation:

Mix in all flours and water with salt. The batter consistency is of butter milk. It is very loose batter. A bit thicker than butter milk actually. And keep the batter aside for 10 minutes. 

In a small pan add oil and add mustard seeds when the oil is hot.Let it break in oil. Then add cumin seeds , green chili , onion/shallots ,curry leaves and salt. When the onion changes its color to golden brown add Asafoetida and turn off the heat. Add this seasoning into the batter and mix well. Heat a frying pan or tawa and keep it on medium flame. Take the batter in a table spoon and pour it by making a outer circle first and fill inside leaving holes. 
Now the toughest part. Leave it for some good time. 4-5 minutes. Depends. It will cook its own and take it into plate when  the bottom turns golden brown. 
Your Rava Dosa is ready!!

Chemba Puttu

What you Need:
Rice flour                 : 4 cups
Water                      : 3 cups
Salt                          : 1/2 tea spoon
Grated Coconut        : 1 Cup.

Brown 'Chemba' Rice flour is the one I have used here. You can choose any rice flour yielding different tastes and appearance.

Preparation:

Take the flour in a large bowl. Mix water with salt.  Add 2 cups of water into it, slowly. Keep stirring the mixture in between. You can see flour turning its texture into something like bread crumbs. Leave the mixture for a minute. It would have absorbed all water and started to dry out.  (The water - flour ratio changes with the type of flour. So just be careful while adding water.)

If you have already pour more water and the flour is wet still,you can add one table spoon flour also.
If it is dry start adding water little by little and rub the flour with your hands.
The consistency we are looking here is like of bread crumbs and not wet and not dry.

Once you feel it is ready, add half cup of coconut and mix well with the flour. Now you need to steam this until cooked. It doesn't require more than 10 minutes to cook.

I use "Puttu Kudam"(A utensil used to steam puttu. ). Add some coconut into it then fill half of it add some coconut again then fill completely. Add a tea spoon coconut on top of it and steam it.

'Puttu' is ready! You can have it with any banana ,milk and sugar,if you like it sweet.  Or you can have it with chicken curry, Dal fry and Channa masala.

Kerala Simple Fish Curry

 Kerala Simple Fish Curry : What I have is a common fish available in Kerala.  Clean it as you see in the picture.    
Ingredients:       
Fish Cleaned     : 5 pieces
Red Kashmir Chili Powder :   One table Spoon   Turmeric Powder : One tea spoon
Curry leaves   : 8
Ginger finely chopped : half tea spoon
Green Chili : 2 -3
Fenugreek seeds  : 5 - 8                                                  
Shallots chopped : 8- 10 pieces                      
White Vinegar : One tea spoon                                    
Coconut Oil   : Two table spoon
Water : One Cup. Or 2/3 Cup
Salt : As required (half tea spoon approx. )



Preparation:                                                               I use clay-pot for fish curry. Place the pot on fire add coconut oil. If you don't like the taste of coconut oil you can go for vegetable oil. One the oil is hot add fenugreek seeds ; After 5 seconds add ginger; Once ginger turns a bit different in color add      chopped shallots and green chilies. Saute it for a minute and add the chili powder and turmeric powder and saute again. A minute later add   water and salt . Let it boil and add fish pieces into it and cook it in low heat. Add Vinegar and the Kerala simple fish curry is ready .   N'JOY! :)

I am from  Kochi, Kerala. People from other parts of Kerala may not be familiar with this sort of recipe. They may be wondering how can you call this a fish curry. I know your thoughts as I have friends from all parts of kerala. :). With fresh fish this is the best recipe to enjoy the taste of fish rather than the taste of spices/or/tamarind.

Easy Chicken fry with Vegetables

Chicken with Pasta and CurdDont know what to name it exactly. Perhaps.. Pasta with Chicken and Curd.  But it is the other way It is a chicken recepie. what ever.. As you see in the picture is the dish! Nothing more nothing less!!     Kids will love this. 
 
What We Need:
Chicken breast :  one piece
Capsicum         :  Half
Onion               : One large size
Tomato             : One medium size
Any Vegetable slice cut in square shape:One/two
To Marinate:
Salt as needed
Black Pepper : One tea spoon
Fresh Ginger & Garlic paste :  Two tea spoon
Pasta & Curd /Salald as side;  For Salad I mix curd, corriander leaves and cucumber alone.

How to Cook:
Marinate the chicken pieces and vegetables with the marinate ingradients. Refrigerate for half an hour.
I keep a set of tooth picks handy. I use them to align chicken pieces and vegetables together. Once you have set the the tooth picks with chicken, capsicum, tomato , onion , carrot/cabbage/mashroom combination, put it into to shallow fry with olive oil or vegetable oil.
A tea spoon of butter brings a different flavour altogether if you want.  Let all four side cook by turing them in every 5 minutes in low heat. Once al sides are cooked serve it hot with boiled pasta and curd/salad. Njoy! :)
