Chilli Chicken

Recently I learned to cook Chilli chicken. I haven't seen any other chicken recepie so quick and delicious & goes with rice/chappathi.I am impressed.

Here we go
Take a bowl put all chicken pieces into it.
Add gigner finely chooped.
Add garlic finely chopped.
Chilli sauce
egg - 1
Chilli powder - as much as u like. I go light version. Fine with 1 tea spoon.
Corn flower - one table spoon.
Salt Needed.

Mix all ingradients well. And refrigerate it for 1/2 an hour. It is optional. If you are running out of time. Skip it. I like the marinate part as the pieces gets delicious smell. :)

Now what ? Fry it in oil.

For gravy.
small piece of ginger and garlic..
Capsicum - 2
Big onion - 2
Cut these into square pieces. Goes into the oil. when the onion turns a bit golden add one tea spoon soya sauce and tomato sauce . Mix a tea spoon of corn flower with half cup water and pour into the pan. When it boils add the fried chicken pieces into it. And your curry is ready.

Idly & Tomato Chutney

I hate idly.. But I love Dosa. This was me before my chennai life. Two years in chennai made me an Idly lover. It is an easy to make break fast. I am proud to make good idly's consistently. I dont mind sharing the secret with you. Afterall sharing yeilds to happiness..:)

Ingradients
1)Idly rice - 2 cups
2)Urd Dal - 1 cup and a tbl spoon extra
3)Salt to taste
Preparation

Soak Rice and Urd dal in water 6 to 8 hours in seperate bowls. Grind the urd dal. and rice seprately. Urd dal mix has to be be as smooth as possible. After grinding you can see some bubbles in the top.If you love sooooft idlys then grind the rice like urd. If not leave very little particles in it. mix well both batters together. The batter consistency should not be too loose and too thick. I know your doubt how will I know what it means too loose and too thick.. ;-).

Let me try to help you out. When I grind urd dal in mixy the level of water would be 1/3 rd of rice higher or two inch high. For rice it just the water level 2 cm above rice.

If you didnt get it Dont worry. Trust your feeling. If you feel the batter is thick , definitly not ,ok go ahead with that is my suggestion.

Keep the batter overnight for 10 hours. Add sault to taste. And keep for 1hr.
Apply oil in the idly maker and pour the batter into it. And -- it for 10 -15 minutes in medium flame. And your idly is ready.
It is 6.22 A.M 3rd Feb 2012. My Idly batter is waiting for me. And Tomato is still in fridge. Wow! I am so happy to cook today. Bye bye..
